Bloomin onion..Awesome blossom.. Problems?

so i got the recipe for the bloomin onion off http://www.recipelink.com/cookbooks/2002/0452275873_2.html.. And it tastes fantastic when i make it but the problem is the breading falls off when i deep fry it.. i tried it twice the second time i soaked the onion and then breaded then egged then breaded again and fryed and it just does not stick..Any suggestions??
